My family prefers this kiwi/strawberry combination. It's best not to make Pavlova on a humid day. Be sure it cools gradually, away from drafts.that way it won't get "chewy". This recipe for Pavlova, made with a meringue shell, whipped cream, and fruit, is one of New Zealand's national desserts.

Instructions to make Pavlova:
  1. Preheat oven to 120C. Line a tray with baking paper.
  2. Using an electric mixer, whisk Egg Whites in a clean & dry bowl until soft peaks form.
  3. Gradually add Caster Sugar, 1 tablespoon at a time, beating well until meringue is thick and glossy and sugar is well dissolved. Add the Vinegar and Cornflour and fold until just combined.
  4. Spoon the meringue onto the lined tray and shape into a 15 to 20cm disc. Bake for 1 hour or until dry to the touch. Turn off oven and leave, with the door ajar, to cool completely.
  5. Whip Cream until thick. Spoon on top of pavlova and decorate with fresh fruit of your choice. Serve immediately.
