- Make ready 1 kg Full cream milk
- Get 50 gm gobindabhog rice
- Get 100 gm dates jaggery
- Make ready 10-12 piece cashew nuts
- Take 3 tbsp raisins
- Make ready 1-2 Bay leaves
- Get 1 tsp cardamom powder
- Take 1 tbsp ghee
Some people keep it in refrigerator and enjoy rice kheer for two three days. In all regional cuisines of India, kheer made of milk and rice is very popular. This Bengali Payesh is also a variant of this milk and rice kheer. Here, long-grained rice is cooked in milk and flavoured with classic Indian spices like cardamom and saffron.
Steps to make Rice Kheer/Payes:
- Heat deep pan and boil the whole milk. Continuously stir and boil and make the milk quantity is half.
- Then add cashew and raisin and cardamom powder.
- Add rice and stir. Cover and cook it almost 15-20 min till the rice almost done. Then add pure ghee and stir.
- When the kheer completely cool then add dates jaggery and nice stir.
- Garnishing some cashew,pista,raisin and dates.
Adding bay leaves to the kheer while cooking gives it a unique aroma that lingers in the kheer even after the leaves are discarded. Bengali Payesh is a sweet kheer dessert from Bangladeshi cuisine. It is made with rice in a different style. It is sometimes also termed as payesh kheer, rice Payesh, Bengali payesh. Some assortments of payesh kheer are chanar payesh, chaler payesh, gurer payesh, chenna payesh and Bengali style payesh kheer.
