- Wash the banga seeds, put it in a clean pot pour enough water into it and cook until tender.
- Bring it down and pound in a mortar. After pounding it seive out out the oil with some water. This is exactly what u will get.
- Then bring it to boil! After it has boiled for like 15 minutes put ur stock fish and add followed by a well beautifully sliced onions (enough). By now you must have well seasoned and par boiled ur meat, add the meat stock and allow to simmer for 10 minutes.
- Now grind the ehuru and add, as well as the ekpei. This is exactly what ur ehuru will look like. It will give ur ofe akwu a very wonderful and heavenly aroma.
- Now that the aroma is every where. Roughly Blend the bell pepper and scotch bonnet and add. Season It and allow to cook for 3minute.
- Roughly Blend the crayfish and add, followed by the meat. Remember u can still add any dry fish of ur choice aside the stock fish if you want. Check for salt and adjust. Then allow to simmer for 3 minutes.
- Finally… Select the curry leaves wash and add it. Ur ugu and scent leaf goes in last. remember ugu is optional. U can still cook with only curry leaves and scent leaves. If you have not been cooking ur ofe akwu with curry leaves and scent leaves together u are really missing! Try it to day and thank me later. Once you add the scent leaves with the ugu leaf u have to stir properly and bring it down! And ur highly inspirational ofe akwu is ready! π
- Note NB: u must not cover the pot while cooking ur ofe akwu from start to finish lest it will be too watery and less enticing to the eye. Thankio!
