- Optional: For preparing scrambled eggs, whisk 2 eggs along with 1 tsp of pepper powder and a pinch of salt. Heat a pan, add 1 tbsp of cooking oil and pour the contents to the pan. Scramble it with a spatula and set it aside.
- Finally, keep a heavy bottom pan or wok on high flame. Add 2 tbsp of sesame oil and stir fry chopped garlic, ginger, spring onions bulbs (white part), green chilli and carrot one after the other and toss for 2 min. Do not overcook the vegetables. Add the scrambled eggs and shredded chicken and toss it well. Add 2 tbsp of soya sauce, 1 tbsp of red chilli sauce and mix well.
- At this stage, add the retained chicken broth and cook for 30 secs. Adjust the flame to medium & add the precooked noodles and toss it well along with half a tsp of red chilli flakes. Squeeze in half a lemon juice and toss it again for 10 secs.
- Switch off the flame & garnish with spring onion greens and serve it hot.
