Gatte ki sabzi or Gatta curry is a very popular and traditional curry from Rajasthan. Rajasthan is a dry climate state and so they have less availability of fresh vegetables,,hence they use much of flours,grains and pulses. Cut the gattas into one inch pieces. Heat sufficient ghee/oil in a kadai and deep-fry the gattas until light golden brown.
Instructions to make Gatta curry(no onion no garlic):
- Prepare a dough of gram flour by adding salt and little soda in it
- Now roll it with hand
- Boil it in water till it comes on top
- Heat oil in a pan crackle cumin seeds
- Add asafoetida in it
- Add red chilli powder turmeric powder coriander powder in it
- Mix curd with grated ginger add half of it to the gravy
- Add gatte in it use water also in which gatte is boiled.
- Let it boil for some time
- Add left curd in it
- Garnish with chopped coriander leaves
